Best Soft Chocolate Chip Cookies

I eat half a dozen of these the second they are off the baking sheet.


  • 3 cups flour
  • 1 cup brown sugar, packed
  • 1 cup butter softened
  • 1/2 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups semi-sweet chocolate chips (more is always better)


Preheat oven to 375 degrees. Blend softened butter and sugars first, until incorporated and tasty looking. Mix in eggs and vanilla. Add the dry ingredients. Finally, add the chocolate chips. Drop by spoonful on either a non-stick or greased baking sheet. Bake 10-12 minutes or until slightly browned. Makes about 4 dozen.

Immediately share with friends or you will eat ALL the cookies and feel fat. Fat and oh so very happy.


Banana Oat Muffins

Dense and hearty breakfast accompaniment I discovered by modifying a banana bread recipe. My goodness do I love brown sugar. I may eat it with a spoon. It may be a problem. A delicious delicious problem.


  • 4 mashed bananas
  • 2 eggs
  • 3/4 cup brown sugar
  • 1 cup flour
  • 1 cup oats
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • Cinnamon to taste

Preheat oven to 350 degrees. Mix ingredients in a large bowl. Place mixture in prepared muffin cups (I use silicone baking cups). Bake for 15-20 minutes. Makes between 12 and 18 muffins.

Theme and variations: I have added preserves, diced canned fruit, and whole berries to this recipe and been quite happy with the results. More vanilla is good, and if the mixture looks too soupy after adding fruit, or if you had extra amounts of banana add 1/4 cup of flour and 1/4 cup of oats to thicken it back up.
